Description

A sweet and vibrant homemade blueberry syrup made with fresh or frozen blueberries, perfect for drizzling over pancakes, waffles, ice cream, or mixing into beverages.


Ingredients

  • 2 cups (10 oz) blueberries
  • 1 cup + 2 Tbsp blueberry juice (or grape/apple juice, divided)
  • 1/3 cup granulated sugar
  • 4 tsp cornstarch
  • 1 Tbsp lemon juice

Instructions

  1. In a medium saucepan, combine blueberries, 1 cup water, and sugar. Bring to a simmer over medium heat, stirring until sugar dissolves.
  2. Reduce heat to low and cook for 10-15 minutes, until blueberries burst and release their juices.
  3. For a thicker syrup, mix cornstarch with 2 tablespoons cold water to create a slurry. Stir into the blueberry mixture and simmer for 2-3 minutes until thickened.
  4. Remove from heat and stir in lemon juice, lemon zest, and vanilla extract (if using).
  5. For a smooth syrup, strain through a fine-mesh sieve to remove skins and seeds. For a chunkier syrup, leave as is or lightly mash with a fork.
  6. Let cool completely before transferring to a jar or bottle. Store in the refrigerator.

Notes

  • Adjust sweetness to taste by adding more or less sugar.
  • For a richer syrup, replace water with apple juice or orange juice.
  • Store in an airtight container in the refrigerator for up to 2 weeks.
