Delicious frozen yogurt bites swirled with homemade blueberry compote, perfect for a refreshing snack.
Ingredients

- 1 cup Greek yogurt
- 1/2 cup blueberries
- 2 tbsp honey or maple syrup
- 1 tsp lemon juice
- 1/2 tsp vanilla extract
- 1 tsp cornstarch (optional)
Instructions
- Prepare the Blueberry Compote: In a small saucepan, combine blueberries, honey, and lemon juice. Cook over medium heat for about 5 minutes until softened.
- If using cornstarch, dissolve it in cold water and stir into the blueberry mixture. Simmer for another minute until thickened, then cool completely.
- In a mixing bowl, combine Greek yogurt and vanilla extract. Mix until smooth and adjust sweetness if desired.
- Spoon the yogurt into molds, filling 3/4 full.
- Add a spoonful of blueberry compote on top and swirl gently with a toothpick.
- Freeze for at least 3 hours until solid, then store in an airtight container in the freezer.

Store in an airtight container in the freezer for up to one month. Let sit for 2-3 minutes at room temperature before eating for the best texture.
