Ingredients

  • 2 cups mixed salad greens (baby spinach, arugula, or spring mix)
  • 1 cup fresh blueberries
  • 1/2 cup shelled pistachios
  • 1/4 cup crumbled feta cheese
  • 1/4 cup red onion, thinly sliced
  • 1/4 cup extra virgin olive oil
  • 2 tablespoons honey
  • 1 tablespoon balsamic vinegar
  • 1 teaspoon Dijon mustard
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions

  1. Rinse and dry mixed salad greens.
  2. Slice red onion thinly.
  3. Make the dressing by whisking together olive oil, honey, balsamic vinegar, Dijon mustard, salt, and black pepper.
  4. Combine greens and onions in a large bowl.
  5. Top with blueberries, pistachios, and crumbled feta.
