Instructions
- Preheat your oven to 375°F (190°C) and line a muffin tin with paper liners.
- In a large bowl, whisk together the all-purpose flour, whole wheat flour, sugar, baking powder, and salt until thoroughly combined.
- In another bowl, whisk together the milk, vegetable oil, egg, and vanilla extract until smooth and creamy.
- Pour the wet mixture into the dry ingredients and stir gently until just combined.
- Fold in the fresh blueberries carefully.
- Spoon the batter into the muffin tin, filling each cup about 2/3 full.
- Bake for 18-20 minutes, or until a toothpick inserted into the center comes out clean.
- Let them cool in the tin for a few minutes before transferring to a wire rack to cool completely.
