Description

A delightful breakfast casserole combining French toast and blueberries with a hint of lemon, perfect for family gatherings or lazy weekends.


Ingredients

  • 8 oz cream cheese
  • 1 cup powdered sugar
  • 2 tbsp milk
  • 1 tbsp vanilla extract
  • 2 cups blueberries
  • 2 loaves French bread, cubed
  • 2 cups milk
  • 8 large eggs
  • 1 tsp cinnamon
  • ½ tsp nutmeg
  • 1 lemon, zested and juiced

Instructions

  1. In a mixing bowl, blend cream cheese, powdered sugar, milk, and vanilla until smooth.
  2. Gently fold in 1 cup blueberries with 1 tbsp lemon juice and lemon zest.
  3. Layer half of the cubed French bread in a greased casserole dish.
  4. Spread the cream cheese mixture over the bread, then top with the remaining bread cubes.
  5. In a separate bowl, whisk together milk, eggs, vanilla extract, cinnamon, nutmeg, and lemon juice and zest.
  6. Pour the custard over the bread, pressing down gently. Scatter remaining blueberries on top.
  7. Cover tightly with foil and refrigerate overnight.
  8. The next morning, preheat the oven to 375°F. Bake covered for 45 minutes.
  9. Uncover and bake for an additional 30 minutes until golden and set.

Notes

Ensure cream cheese is at room temperature for easier mixing. Adjust sugar levels to taste.
