Ingredients

- 2 cups fresh or frozen blueberries
- 1/3 cup granulated sugar
- 2 tablespoons lemon juice
- 1 teaspoon lemon zest
- 2 large egg yolks
- 1 large whole egg
- Pinch of salt
- 4 tablespoons unsalted butter, cut into cubes
Instructions
- In a small saucepan, combine the blueberries, lemon juice, and lemon zest. Cook over medium heat, stirring occasionally for 5 to 7 minutes.
- Once the blueberries are soft, transfer the mixture to a blender and puree until smooth.
- Pour the blueberry puree through a fine-mesh sieve back into your saucepan to remove any skins and seeds.
- In a separate bowl, whisk together the egg yolks, whole egg, and sugar until pale and creamy. Slowly whisk this mixture into the warm blueberry puree.
- Return the saucepan to the stove over low to medium heat. Cook gently, stirring constantly for 8 to 10 minutes until thickened.
- Remove from heat and stir in the butter cubes until fully melted and the curd is glossy.
- Let the curd cool for 10 to 15 minutes at room temperature, then transfer to jars and refrigerate.
Notes
Ensure your butter is at room temperature for easy incorporation. If your curd doesn’t thicken, keep cooking gently until it reaches the desired thickness.
