Ingredients

- 1 cup fresh or frozen blueberries
- 1 tablespoon lemon juice
- 8 oz full-fat cream cheese, softened
- 1/2 cup unsalted butter, softened
- 3 to 4 cups powdered sugar, sifted
- 1 teaspoon pure vanilla extract
- Pinch of salt
Instructions
- In a small saucepan over medium heat, combine blueberries and lemon juice, simmer for 8 to 10 minutes.
- Remove from heat and cool completely.
- In a large mixing bowl, beat butter until smooth; add cream cheese and beat until light and fluffy.
- Gradually add sifted powdered sugar, vanilla extract, and salt, mixing until smooth.
- Incorporate cooled blueberry reduction and mix until fluffy.
Notes
Store frosting in an airtight container in the fridge for up to a week. Can be frozen for up to 3 months.
