Description

A luscious blend of cream cheese and fresh blueberries, perfect for topping cakes or cupcakes.


Ingredients

  • 1 cup fresh or frozen blueberries
  • 1 tablespoon lemon juice
  • 8 oz full-fat cream cheese, softened
  • 1/2 cup unsalted butter, softened
  • 3 to 4 cups powdered sugar, sifted
  • 1 teaspoon pure vanilla extract
  • Pinch of salt

Instructions

  1. In a small saucepan over medium heat, combine blueberries and lemon juice, simmer for 8 to 10 minutes.
  2. Remove from heat and cool completely.
  3. In a large mixing bowl, beat butter until smooth; add cream cheese and beat until light and fluffy.
  4. Gradually add sifted powdered sugar, vanilla extract, and salt, mixing until smooth.
  5. Incorporate cooled blueberry reduction and mix until fluffy.

Notes

Store frosting in an airtight container in the fridge for up to a week. Can be frozen for up to 3 months.
