A quick and easy recipe for a creamy Blueberry Chia Seed Pudding, perfect for breakfast or a healthy snack.

- 2 cups unsweetened almond milk (or milk of choice)
- 1/2 cup whole chia seeds
- 1 cup fresh blueberries (organic recommended)
- Extra blueberries for topping
- 2 tablespoons maple syrup or honey
- 1 teaspoon pure vanilla extract
- Pinch of salt
Instructions
- In a blender, mix 1 cup almond milk, 1 cup fresh blueberries, maple syrup or honey, vanilla extract, and a pinch of salt. Blend until completely smooth.
- Pour the blueberry mixture into a bowl. Add the remaining 1 cup of almond milk and chia seeds. Whisk thoroughly for 1 to 2 minutes.
- Allow the mixture to sit at room temperature for 5 to 10 minutes, stirring once more.
- Cover and refrigerate for at least 4 hours, or overnight for best texture.
- Before serving, stir well, spoon into bowls, and top with additional blueberries and desired toppings.
Notes
Make sure to use room temperature almond milk and blend long enough for a smooth texture. Avoid clumping by stirring halfway through the chilling process.
