Description

A quick and easy recipe for a creamy Blueberry Chia Seed Pudding, perfect for breakfast or a healthy snack.


Ingredients

  • 2 cups unsweetened almond milk (or milk of choice)
  • 1/2 cup whole chia seeds
  • 1 cup fresh blueberries (organic recommended)
  • Extra blueberries for topping
  • 2 tablespoons maple syrup or honey
  • 1 teaspoon pure vanilla extract
  • Pinch of salt

Instructions

  1. In a blender, mix 1 cup almond milk, 1 cup fresh blueberries, maple syrup or honey, vanilla extract, and a pinch of salt. Blend until completely smooth.
  2. Pour the blueberry mixture into a bowl. Add the remaining 1 cup of almond milk and chia seeds. Whisk thoroughly for 1 to 2 minutes.
  3. Allow the mixture to sit at room temperature for 5 to 10 minutes, stirring once more.
  4. Cover and refrigerate for at least 4 hours, or overnight for best texture.
  5. Before serving, stir well, spoon into bowls, and top with additional blueberries and desired toppings.

Notes

Make sure to use room temperature almond milk and blend long enough for a smooth texture. Avoid clumping by stirring halfway through the chilling process.
