Description

A lighter, healthier twist on the classic BLT, featuring chicken, bacon, and fresh vegetables wrapped in romaine lettuce.


Ingredients

  • 2 cups cooked chicken breast, diced
  • 4 slices bacon, cooked and crumbled
  • 8 leaves romaine lettuce
  • 1 medium tomato, diced
  • 1/4 cup red onion, finely chopped
  • 2 tablespoons light mayonnaise
  • 2 tablespoons plain Greek yogurt
  • 1/2 avocado, diced
  • 1 teaspoon lemon juice
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon sea salt
  • 1 tablespoon chopped fresh chives

Instructions

  1. Cook the bacon in a skillet over medium heat until crispy, about 6-8 minutes. Drain on paper towels and crumble when cool.
  2. Prepare the chicken salad by combining diced chicken, crumbled bacon, diced tomato, red onion, avocado, light mayonnaise, Greek yogurt, lemon juice, garlic powder, black pepper, and sea salt in a mixing bowl.
  3. Mix all the ingredients gently until well combined.
  4. Assemble the wraps by placing the chicken salad onto each romaine lettuce leaf.
  5. Garnish with chopped chives and serve immediately.

Notes

These wraps are best enjoyed fresh but can last for about 2 days in the fridge. Prepare the chicken salad ahead of time and store it separately for optimal freshness.
