- 2 cups all-purpose flour
- 1/2 cup granulated sugar
- 1 teaspoon baking powder
- 1/2 cup unsalted butter (cold, cubed)
- 1 egg
- 1 teaspoon vanilla extract
- 2 cups black mulberries (fresh or frozen)
- 1/3 cup sugar
- 1 tablespoon cornstarch
- 1 tablespoon lemon juice
Instructions
- Preheat your oven to 180°C (350°F) and line a baking pan (approximately 8×8 inches) with parchment paper.
- Combine the flour, sugar, and baking powder in a large mixing bowl.
- Incorporate the cold, cubed butter into the dry mixture until it resembles coarse breadcrumbs.
- Beat the egg and vanilla extract together, then pour into the crumb mixture and mix until a soft, crumbly dough forms.
- Divide the dough into two-thirds and press firmly into the bottom of your prepared pan.
- Fold together the black mulberries, sugar, cornstarch, and lemon juice in another bowl.
- Spread the mulberry filling evenly over the prepared base.
- Crumble the remaining dough over the top.
- Bake for 30–35 minutes, or until the top is golden brown and the filling is bubbling.
- Allow to cool completely before slicing into squares and serving.
Notes
For the best results, use unsalted butter for flavor control, and ensure it’s very cold for optimal flaking. Serve with whipped cream or vanilla ice cream.
