Ingredients
Scale
- 2 3/4 cups all-purpose flour
- 1 cup unsalted butter, softened
- 1/2 cup granulated sugar
- 1 packet of vanilla sugar (or 1 teaspoon vanilla extract)
- 1 large egg
- 1 tablespoon cocoa powder
- 7 ounces high-quality white chocolate
- 3.4 fluid ounces heavy cream
- 10.5 ounces cherry jam (strained) or cherry jelly
- Optional: 1-2 tablespoons cherry schnapps
- 3.5 ounces milk or dark chocolate, for dipping
- A small handful of chopped dark chocolate for sprinkling
Instructions
- Knead the dough ingredients in a large bowl until a smooth ball forms. Wrap in plastic wrap and refrigerate for 30-60 minutes.
- Chop white chocolate and place in a heatproof bowl. Boil heavy cream and pour over chocolate. Stir until smooth. Refrigerate for a few hours.
- Preheat oven to 320°F (or 356°F for conventional oven).
- Roll out chilled dough to 1/8 inch thick. Cut out circles using a cookie cutter, and cut smaller holes in half for tops.
- Bake cookie rounds on lined baking sheets for about 10-12 minutes. Cool on a wire rack.
- Melt dark chocolate in a double boiler and dip cookies with holes in chocolate. Sprinkle with chopped chocolate and let set.
- Beat chilled white chocolate ganache until creamy, transfer to a piping bag and pipe onto cookies without holes.
- Warm cherry jam or jelly and fill piped cookies.
Notes
Use high-quality chocolate for better flavor. Allow dough to chill before rolling out for ease of use.
