- 2 lbs beef chuck roast
- 2 cups beef broth
- 2 dried guajillo chiles
- 2 dried ancho chiles
- 4 cloves garlic, minced
- 1 onion, quartered
- 1 tbsp cumin
- 1 tbsp oregano
- Salt and pepper to taste
- Corn tortillas
- Oaxacan cheese, shredded
- Fresh cilantro, chopped
- Lime wedges
Instructions
- Soak the dried guajillo and ancho chiles in hot water for about 15 minutes until they become soft. Drain and blend with beef broth, minced garlic, quartered onion, cumin, oregano, salt, and pepper until smooth.
- In a large pot, sear the beef chuck roast until nicely browned on all sides, about 4-5 minutes per side.
- Pour the blended sauce over the beef, cover, and let simmer on low heat for about 180 minutes.
- Remove the meat from the pot, shred with two forks, and strain the consomé for serving.
- Heat a skillet over medium heat, dip corn tortillas briefly in the consomé, fill with shredded beef and cheese, and fry until crispy.
- Serve topped with fresh cilantro and lime wedges, alongside a warm cup of consomé.
Notes
Use high-quality chiles for the best flavor. You can also use pork or chicken instead of beef.
