- 2 cups vegetable broth
- 1 cup mushrooms, sliced (button, shiitake, or mixed)
- 1 small onion, diced
- 2 cloves garlic, minced
- 2 tablespoons olive oil

- Fresh parsley for garnish
Instructions
- Heat the olive oil in a large pan over medium heat until shimmering.
- Add the diced onion and sauté for about 3-4 minutes until translucent.
- Stir in the minced garlic and sliced mushrooms; cook until mushrooms are soft and browned, about 5 minutes.
- Add the rice and stir with the mushroom mixture for about 2-3 minutes.
- Pour in the vegetable broth, bring to a boil, and scrape the bottom of the pot.
- Reduce heat to low, cover, and simmer for 15-20 minutes until rice is tender.
- Fluff rice with a fork, season with salt and pepper, and garnish with fresh parsley.
