Description

This comforting dish combines earthy mushrooms with fluffy rice for a delightful meal that’s both easy to make and budget-friendly.


Ingredients

  • 1 cup Arborio rice
  • 2 cups vegetable broth
  • 1 cup mushrooms, sliced (button, shiitake, or mixed)
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Heat the olive oil in a large pan over medium heat until shimmering.
  2. Add the diced onion and sauté for about 3-4 minutes until translucent.
  3. Stir in the minced garlic and sliced mushrooms; cook until mushrooms are soft and browned, about 5 minutes.
  4. Add the rice and stir with the mushroom mixture for about 2-3 minutes.
  5. Pour in the vegetable broth, bring to a boil, and scrape the bottom of the pot.
  6. Reduce heat to low, cover, and simmer for 15-20 minutes until rice is tender.
  7. Fluff rice with a fork, season with salt and pepper, and garnish with fresh parsley.

Notes

For a creamier texture, use Arborio rice and ensure mushrooms are dry before cutting.
