Ingredients

  • 1 lb boneless, skinless chicken breast (sliced or cubed)
  • Salt and pepper, to taste
  • 1 tbsp olive oil
  • 3 tbsp unsalted butter
  • 4 cloves garlic, minced
  • 2 tbsp all-purpose flour
  • 2 cups low-sodium chicken broth
  • 1 cup heavy cream
  • ½ cup freshly grated parmesan cheese
  • ½ cup sun-dried tomatoes (oil-packed, drained and chopped)
  • 1 tsp smoked paprika
  • 1 tsp dried Italian seasoning
  • ½ lb (8 oz) penne pasta
  • Fresh basil, chopped (for garnish)

Instructions

  1. Season the chicken with salt and pepper. In a large skillet, heat the olive oil over medium-high heat. Sear the chicken until browned and cooked through, about 5–7 minutes. Remove the chicken and set aside.
  2. In the same skillet, lower the temperature slightly and melt the butter. Add the minced garlic and sauté for 30 seconds until fragrant. Sprinkle in the flour and whisk constantly for 1–2 minutes until a paste forms.
  3. Slowly pour in the chicken broth, followed by the heavy cream. Whisk continuously to prevent lumps until the sauce thickens, about 4-5 minutes. Mix in the grated Parmesan until melted.
  4. Stir in the sun-dried tomatoes, smoked paprika, and Italian seasoning. Let the sauce simmer for a few more minutes to develop flavors.
  5. Return the chicken to the skillet and let it simmer in the sauce. Cook the penne pasta according to package directions until al dente, then drain and toss into the sauce until coated.
  6. Garnish with chopped basil and serve immediately.
