Delicious, nutritious energy balls made with flaxseed, oats, and peanut butter, perfect for quick snacks.
Ingredients

- 1 1/4 cups rolled oats
- 3/4 cup natural peanut butter
- 1/2 cup flaxseed meal
- 1/3 cup honey
- 1 teaspoon vanilla extract
- 1/2 cup semi-sweet chocolate chips
- Pinch of salt
Instructions
- In a large mixing bowl, combine the oats, flaxseed meal, and salt. Stir well to distribute.
- Add the peanut butter, honey, and vanilla to the dry mixture and mix until well combined.
- Gently fold in the chocolate chips.
- Portion out the mixture and roll into 1-inch balls. If sticky, refrigerate for 15-20 minutes before rolling.
- Chill the rolled energy balls on a baking sheet for at least 30 minutes.
- Store in an airtight container in the fridge for up to two weeks or freeze for up to three months.
Notes
For a vegan version, use maple syrup instead of honey. Feel free to customize with different nut butters or add-ins.
