Description

Delicious, nutritious energy balls made with flaxseed, oats, and peanut butter, perfect for quick snacks.


Ingredients

Scale
  • 1 1/4 cups rolled oats
  • 3/4 cup natural peanut butter
  • 1/2 cup flaxseed meal
  • 1/3 cup honey
  • 1 teaspoon vanilla extract
  • 1/2 cup semi-sweet chocolate chips
  • Pinch of salt

Instructions

  1. In a large mixing bowl, combine the oats, flaxseed meal, and salt. Stir well to distribute.
  2. Add the peanut butter, honey, and vanilla to the dry mixture and mix until well combined.
  3. Gently fold in the chocolate chips.
  4. Portion out the mixture and roll into 1-inch balls. If sticky, refrigerate for 15-20 minutes before rolling.
  5. Chill the rolled energy balls on a baking sheet for at least 30 minutes.
  6. Store in an airtight container in the fridge for up to two weeks or freeze for up to three months.

Notes

For a vegan version, use maple syrup instead of honey. Feel free to customize with different nut butters or add-ins.
