Ingredients

  • 1 prime rib roast (4 to 6 pounds)
  • 2 tablespoons kosher salt
  • 1 tablespoon black pepper
  • 1 tablespoon garlic powder
  • 1 tablespoon onion powder
  • 1 tablespoon fresh rosemary, chopped
  • 1 tablespoon fresh thyme, chopped
  • 2 cups low sodium beef broth
  • 1 tablespoon olive oil

Instructions

  1. Preheat your oven to 450°F (232°C).
  2. In a small bowl, mix together the kosher salt, black pepper, garlic powder, onion powder, rosemary, and thyme.
  3. Rub the prime rib roast generously with olive oil. Coat it evenly with the spice mixture.
  4. Place the seasoned roast in a roasting pan, bone-side down, and pour the beef broth into the pan.
  5. Roast the prime rib in the preheated oven for 20 minutes.
  6. Reduce the oven temperature to 325°F (163°C) and continue cooking for about 1.5 to 2 hours, checking for doneness.
  7. Once done, remove the roast from the oven and tent it with foil. Allow it to rest for at least 20 minutes.
  8. Slice the roast against the grain and serve with your favorite side dishes.

Ensure the prime rib is at room temperature before cooking for even cooking. Use a meat thermometer for best results.
