- 1 cup unsalted butter, softened
- 1 cup granulated sugar
- 1 cup packed brown sugar
- 2 large eggs
- 1 tablespoon vanilla extract
- 2 cups fresh or dried cranberries
- Zest of 1 large orange
- 1 cup powdered sugar (for optional icing)
Instructions
- Preheat your oven to 350°F (175°C), and line a baking sheet with parchment paper.
- In a mixing bowl, whisk together the flour, baking soda, and salt. Set it aside.
- In a stand mixer, beat the softened unsalted butter with granulated sugar and brown sugar for about 2-3 minutes until light and fluffy.
- Add the eggs, one at a time, mixing well after each addition, then pour in the vanilla extract.
- Gradually add the dry ingredients to the butter mixture, mixing at low speed until just combined.
- Gently fold in the cranberries and orange zest until evenly distributed.
- Drop rounded tablespoons of dough onto the prepared baking sheet, spacing them about 2 inches apart. Bake for 12-15 minutes or until the edges are golden.
- Allow to cool for 5 minutes before transferring to a rack. Drizzle with icing if desired.
Notes
Chill the dough for an even chewier texture. Store in an airtight container for up to a week or freeze for longer storage.
