Ingredients

  • 1 teaspoon baking soda
  • ½ teaspoon salt
  • 1 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 1 cup packed brown sugar
  • 2 large eggs
  • 1 tablespoon vanilla extract
  • 2 cups fresh or dried cranberries
  • Zest of 1 large orange
  • 1 cup powdered sugar (for optional icing)

Instructions

  1. Preheat your oven to 350°F (175°C), and line a baking sheet with parchment paper.
  2. In a mixing bowl, whisk together the flour, baking soda, and salt. Set it aside.
  3. In a stand mixer, beat the softened unsalted butter with granulated sugar and brown sugar for about 2-3 minutes until light and fluffy.
  4. Add the eggs, one at a time, mixing well after each addition, then pour in the vanilla extract.
  5. Gradually add the dry ingredients to the butter mixture, mixing at low speed until just combined.
  6. Gently fold in the cranberries and orange zest until evenly distributed.
  7. Drop rounded tablespoons of dough onto the prepared baking sheet, spacing them about 2 inches apart. Bake for 12-15 minutes or until the edges are golden.
  8. Allow to cool for 5 minutes before transferring to a rack. Drizzle with icing if desired.

Chill the dough for an even chewier texture. Store in an airtight container for up to a week or freeze for longer storage.
