Ingredients

  • 23 medium fresh organic beets
  • 1 can mandarin oranges, drained
  • ½ red onion, thinly sliced
  • ⅓ cup pine nuts, toasted
  • ½ cup feta cheese, crumbled
  • 2 tablespoons honey
  • 1 tablespoon Dijon mustard
  • Juice of 1 lemon
  • ¼ cup olive oil
  • Salt & pepper to taste

Instructions

  1. Cook the beets: Roast or boil the beets until tender, about 45-60 minutes if roasting or 30-40 minutes if boiling. Allow them to cool, peel, and slice.
  2. Assemble the salad: In a large bowl, combine spinach, sliced beets, mandarin oranges, red onion, and pine nuts. Top with feta cheese.
  3. Make the dressing: In a small bowl, whisk together honey, mustard, lemon juice, olive oil, and season to taste with salt and pepper.
  4. Dress the salad: Drizzle the vinaigrette over the salad and gently toss to combine.
