- 4 cups fresh baby spinach
- 2–3 medium fresh organic beets
- 1 can mandarin oranges, drained
- ½ red onion, thinly sliced
- ⅓ cup pine nuts, toasted
- ½ cup feta cheese, crumbled
- 2 tablespoons honey
- 1 tablespoon Dijon mustard
- Juice of 1 lemon
- ¼ cup olive oil
- Salt & pepper to taste
Instructions
- Cook the beets: Roast or boil the beets until tender, about 45-60 minutes if roasting or 30-40 minutes if boiling. Allow them to cool, peel, and slice.
- Assemble the salad: In a large bowl, combine spinach, sliced beets, mandarin oranges, red onion, and pine nuts. Top with feta cheese.
- Make the dressing: In a small bowl, whisk together honey, mustard, lemon juice, olive oil, and season to taste with salt and pepper.
- Dress the salad: Drizzle the vinaigrette over the salad and gently toss to combine.
- Serve immediately: Enjoy fresh as a side dish at your gatherings.
