Description

Delight in these vibrant and nutritious beet crackers, a perfect gluten-free snack loaded with flavor and crunch.


Ingredients

  • 1 1/2 cups blanched almond flour (140g)
  • 1/3 cup tapioca starch (43g)
  • 1/3 cup ground flaxseed (32g)
  • 1/2 tsp salt
  • 1/3 cup pureed beets (80g)
  • 1 Tbsp olive oil
  • Flaked salt (optional topping)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Mix the dry ingredients: almond flour, tapioca starch, ground flaxseed, and salt in a large bowl.
  3. Incorporate the pureed beets and olive oil into the dry mixture until a doughy consistency is formed.
  4. Knead the dough with clean hands for about 2-3 minutes until smooth.
  5. Roll out the dough between two sheets of parchment paper to 1/8 – 1/4 inches thick.
  6. Cut the dough into squares and sprinkle flaked salt on top.
  7. Bake for 20 minutes until lightly golden.
  8. Finish baking by separating the crackers and returning them to the oven for another 8-10 minutes.
  9. Cool completely on the sheet before transferring to a wire rack.
  10. Store in an airtight container at room temperature for up to 1 week or in the fridge for 2 weeks.

Notes

For the best flavor, ensure beet puree is smooth. You can customize seasoning with herbs or spices as desired.
