Description
A cozy and comforting Beef Stroganoff that features tender rib-eye steak, earthy cremini mushrooms, and a creamy sauce over egg noodles, perfect for family dinners.

- 600 g rib-eye steak, trimmed and pounded to ¾ cm thick
- 300 g cremini mushrooms, sliced ⅛-inch thick
- 1 medium onion, thinly sliced
- 1 Tbsp Dijon mustard
- 150 ml full-fat sour cream
- 500 ml low-salt beef broth
- 2 Tbsp butter
- 1 Tbsp plain flour
- 2 Tbsp neutral oil (for searing)
- Kosher salt, to taste
- Freshly cracked black pepper, to taste
- Chopped chives, for garnish
- Egg noodles or tagliatelle, for serving
Instructions
- Pound the rib-eye: Place the rib-eye steak between two sheets of plastic wrap and pound it to a ¾ cm thickness using a meat mallet. Slice into strips and season with salt and pepper.
- Heat oil and sear: In a large skillet, heat 1 Tbsp of oil over high heat. Add half of the beef strips, searing for about 30 seconds on each side until browned. Transfer to a plate.
- Repeat with remaining beef: Add the remaining oil and repeat with the rest of the beef, searing until nicely browned. Set aside.
- Sauté onions and mushrooms: Lower the heat, add butter to the skillet, and then add the sliced onions. Sauté for 1 minute before adding the mushrooms. Cook for about 4 minutes until golden brown.
- Add flour: Sprinkle in the flour and stir for about a minute to cook out the raw taste.
- Add broth and Dijon: Gradually pour in ½ cup of beef broth, scraping the bottom of the pan. Once smooth, add the rest of the broth and the Dijon mustard, simmer for about 5 minutes.
- Incorporate sour cream: Remove from heat and stir in the sour cream until the sauce is smooth.
- Return the beef: Add the browned beef and any juices back into the skillet. Warm on low heat for about 1 minute.
- Plate and garnish: Ladle the stroganoff over buttered egg noodles or tagliatelle and top with chopped chives.
Notes
Use high-quality rib-eye steak for the best flavor. Store leftovers in an airtight container for up to three days.
