- 1 tablespoon oyster sauce
- 1 tablespoon soy sauce
- 0.5 teaspoon garlic powder
- 0.5 teaspoon ginger powder
- 0.5 teaspoon ground black pepper
- 0.5 teaspoon baking soda
- 2 tablespoons water (for marinade)
- 0.25 cup ketchup
- 2 teaspoons sugar
- 0.5 teaspoon table salt
- 1 tablespoon cornstarch
- 2 tablespoons water (for sauce)
- 5 cloves garlic, minced
- 0.25 cup chopped shallot
- 5 thin slices ginger, julienned
- 1 lb roma tomatoes, cut into wedges
- 2 green onions, white and green parts separated and chopped
- Jasmine rice, for serving
- 4 fried eggs for serving (optional)
Instructions
- Slice the flank steak into 2-3 inch wide pieces along the grain, then cut against the grain into 0.125-inch thick slices.
- Marinate the beef by dissolving baking soda in 2 tablespoons of water and coat the beef slices, letting them sit for 5 minutes.
- Prepare the marinade by mixing oyster sauce, soy sauce, garlic powder, ginger powder, and black pepper in a bowl. Add to the marinated beef and mix well.
- Make the sauce by combining cornstarch and 2 tablespoons water, then mixing in ketchup, sugar, and salt until smooth.
- Fry the eggs if using, to your preference, and set aside.
- Cook the beef in a heated wok or large skillet on high with oil until about 90% cooked, then set aside.
- Stir-fry the garlic, shallots, and ginger in the same pan until fragrant.
- Add the tomato wedges and stir for about 30 seconds until they soften.
- Combine the beef back into the pan with green onions and pour in the sauce, tossing everything for another 30 seconds until heated throughout.
- Finish by mixing in most of the green onion greens.
- Plate the stir fry over jasmine rice and top with fried eggs if desired.
- Enjoy your comforting dish!
