A hearty and comforting Beef & Lentil Chili that combines the richness of beef with the earthiness of lentils for a deliciously satisfying meal.

- 1 lb ground beef (85% lean)
- 1 medium onion, chopped
- 2 garlic cloves, minced
- 1 cup dried brown or green lentils, rinsed
- 1 (14.5 oz) can diced tomatoes
- 1 (6 oz) can tomato paste
- 4 cups low-sodium beef broth
- 1 cup water
- 1 tsp cumin
- 1 tsp chili powder
- ½ tsp smoked paprika
- Salt & pepper, to taste
- Optional toppings: Shredded cheddar, sour cream, sliced jalapeños, diced avocado, and fresh cilantro
Instructions
- In a large pot over medium heat, add the ground beef. Cook until browned, about 5–7 minutes, breaking it up as it cooks. Drain excess fat.
- Add chopped onion and minced garlic. Sauté for about 5 minutes until the onion is soft and translucent.
- Push the beef mixture to one side and add the tomato paste to the empty side. Stir and caramelize for 1 minute.
- Mix everything together and add lentils, diced tomatoes, beef broth, water, and spices. Bring to a boil, then reduce to a simmer.
- Cook uncovered for 35-40 minutes, stirring occasionally, until lentils are tender.
- Taste and adjust seasonings with salt and pepper. Let it rest for 5–10 minutes before serving.
Notes
Store leftovers in an airtight container for up to 4 days. This chili tastes even better the next day.
