Description

A delightful twist on the classic angel food cake with a stunning pink hue, perfect for any celebration.


Ingredients

  • 1 cup plus 3 tablespoons cake flour, sifted
  • 1 cup plus 3 tablespoons powdered sugar, sifted
  • 1/2 teaspoon salt
  • 2 cups egg whites (about 13–14), room temperature
  • 1 1/2 teaspoons cream of tartar
  • 3/4 cup plus 2 tablespoons superfine sugar
  • 1/2 teaspoon vanilla bean paste or pure vanilla extract
  • 1/8 teaspoon almond extract
  • Several drops of pink food coloring (optional)
  • For Meringue:
  • 6 egg whites (about 180 g), room temperature
  • 1 3/4 cups plus 2 tablespoons granulated sugar
  • 2 tablespoons light corn syrup
  • 1/4 teaspoon cream of tartar
  • Dash of salt
  • 1 teaspoon vanilla bean paste or pure vanilla extract
  • Several drops of pink food coloring (optional)
  • Optional for Decoration:
  • Rainbow nonpareil sprinkles

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a medium bowl, sift together the cake flour, powdered sugar, and salt. Set aside.
  3. In a large mixing bowl, beat the room-temperature egg whites with an electric mixer on medium speed until foamy, about 2 minutes.
  4. Sprinkle the cream of tartar into the egg whites and continue to beat until soft peaks form, about 3–4 minutes.
  5. Increase the mixer speed to high and gradually add the superfine sugar, about a tablespoon at a time. Beat until stiff, glossy peaks form, around 5 minutes.
  6. Gently fold in the vanilla bean paste, almond extract, and pink food coloring until combined.
  7. Gradually sift the dry ingredients over the meringue and gently fold using the ‘figure-eight’ method until just combined.
  8. Pour the batter into an ungreased 10-inch tube pan, spreading it evenly.
  9. Bake for 35–40 minutes, until golden brown and a toothpick inserted in the center comes out clean.
  10. Invert the tube pan onto a cooling rack and allow the cake to cool completely upside down.
  11. Once cooled, run a thin knife around the edges and center of the pan to carefully release the cake.
  12. If desired, whip up some whipped cream and sprinkle with rainbow nonpareil sprinkles for decoration.

Notes

Ensure all ingredients are at room temperature for best results. Store leftovers in an airtight container for up to three days.
