BBQ Chicken Quesadillas

Description

Delicious BBQ Chicken Quesadillas with gooey cheese and tender shredded chicken, perfect for busy weeknights and crowd-pleasing gatherings.


Ingredients

  • 2 cups cooked shredded chicken
  • 1/2 cup barbecue sauce
  • 2 cups shredded cheddar cheese
  • 4 large flour tortillas
  • 1/4 cup chopped green onions (optional)
  • 2 tablespoons olive oil

Instructions

  1. In a bowl, combine the cooked shredded chicken with the barbecue sauce until well coated.
  2. Heat 1 tablespoon of olive oil in a large skillet over medium heat.
  3. Place one tortilla in the skillet and sprinkle with 1/2 cup of shredded cheese.
  4. Spread 1/2 cup of the BBQ chicken mixture evenly over the cheese, then top with another 1/2 cup of shredded cheese.
  5. Cover with a second tortilla and cook for 3-4 minutes until the bottom tortilla is golden brown and cheese begins to melt.
  6. Carefully flip the quesadilla and cook the other side for another 3-4 minutes until golden and cheese is fully melted.
  7. Remove from skillet and repeat with remaining tortillas and filling.
  8. Slice the quesadillas into wedges and garnish with chopped green onions if desired.

Notes

Serve with sides like a fresh garden salad or dips such as salsa or guacamole for an extra zing!
