- 2 cups cooked shredded chicken
- 1/2 cup barbecue sauce
- 2 cups shredded cheddar cheese
- 4 large flour tortillas
- 1/4 cup chopped green onions (optional)
- 2 tablespoons olive oil
Instructions
- In a bowl, combine the cooked shredded chicken with the barbecue sauce until well coated.
- Heat 1 tablespoon of olive oil in a large skillet over medium heat.
- Place one tortilla in the skillet and sprinkle with 1/2 cup of shredded cheese.
- Spread 1/2 cup of the BBQ chicken mixture evenly over the cheese, then top with another 1/2 cup of shredded cheese.
- Cover with a second tortilla and cook for 3-4 minutes until the bottom tortilla is golden brown and cheese begins to melt.
- Carefully flip the quesadilla and cook the other side for another 3-4 minutes until golden and cheese is fully melted.
- Remove from skillet and repeat with remaining tortillas and filling.
- Slice the quesadillas into wedges and garnish with chopped green onions if desired.
Notes
Serve with sides like a fresh garden salad or dips such as salsa or guacamole for an extra zing!
