Description

A delicious BBQ Chicken Bowl that combines tender grilled chicken, zesty corn slaw, and fresh ingredients for a flavorful meal.


Ingredients

  • 1.33 lbs boneless skinless chicken thighs
  • 1 tbsp olive oil
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • 1/2 tsp paprika
  • 1/2 tsp chili powder
  • 1/2 tsp kosher salt
  • 1/4 tsp black pepper
  • 1/2 cup barbecue sauce (reduced sugar)
  • 2 cups corn (fresh, frozen, or canned)
  • 3 cups shredded cabbage slaw
  • 1/4 cup cilantro, chopped
  • 2 tbsp green onions or red onions
  • 1/2 jalapeno, minced (optional)
  • 2 tbsp nonfat plain Greek yogurt
  • 2 tbsp light mayonnaise
  • 1 tbsp honey
  • 2 tbsp lime juice
  • 1/2 tsp cumin
  • Salt and pepper to taste
  • 2 cups cooked white rice
  • 2 cups canned black beans, rinsed and drained
  • 1 cup cherry tomatoes, halved
  • 1/4 cup light ranch dressing (optional)

Instructions

  1. Preheat the oven to 425°F.
  2. Combine garlic powder, onion powder, paprika, chili powder, kosher salt, and black pepper in a bowl.
  3. Coat the chicken thighs with olive oil and sprinkle the spice mixture evenly over them.
  4. Place the chicken on a foil-lined baking sheet and bake for 20 minutes.
  5. Brush remaining barbecue sauce on one side of the chicken, broil for 3-4 minutes until browned.
  6. Flip chicken and apply more barbecue sauce, broil for another 3-4 minutes.
  7. Mix Greek yogurt, mayonnaise, lime juice, honey, cumin, salt, and pepper in a bowl to create the slaw mixture.
  8. Fold in cabbage, corn, cilantro, green onions, and jalapeno.
  9. Assemble the bowls with rice, sliced chicken, slaw, black beans, and tomatoes.

Notes

For extra flavor, marinate the chicken overnight. For a vegetarian option, substitute chicken with grilled portobello mushrooms or tofu.
