- 1 ½ lbs boneless skinless chicken tenderloins
- 1 cup buttermilk
- ¾ cup all-purpose flour
- ½ cup cornstarch
- 1 large egg
- 1 tablespoon Sriracha
- ½ teaspoon garlic powder
- ½ teaspoon kosher salt
- ¼ teaspoon black pepper
- 2 cups panko breadcrumbs
- Canola oil for frying
- 1 cup mayonnaise
- ½ cup Thai sweet chili sauce
- 1 teaspoon Sriracha
- 2 tablespoons honey
Instructions
- Mix mayonnaise, sweet chili sauce, Sriracha, and honey for Bang Bang sauce. Set aside.
- Marinate chicken in buttermilk for 30 minutes.
- Combine flour, cornstarch, garlic powder, salt, and pepper in shallow dish.
- In separate bowl, beat egg with 1 tablespoon Sriracha.
- Dredge chicken in flour mixture, dip in egg wash, then coat with panko.
- Heat oil to 350°F (175°C). Fry chicken 4-5 minutes per side until golden.
- Toss fried chicken in Bang Bang sauce. Serve immediately.
Notes
- Don’t overcrowd pan when frying for crispier chicken
- Adjust Sriracha amount to control spice level
- Serve with extra sauce for dipping
- For healthier version, bake at 400°F for 20-25 minutes
