- Unsalted butter for frying (around 6 tablespoons or more, as needed)
- 4 large eggs
- 2 tablespoons granulated sugar
- 1 ½ cups half-and-half or whole milk
- 1 teaspoon cinnamon
- 1 teaspoon pure vanilla extract
- 6 tablespoons unsalted butter (for banana topping)
- ½ cup packed brown sugar
- ¼ cup maple syrup
- ¼ cup dark rum or 1 teaspoon rum extract
- ¼ cup chopped pecans (optional)
- 2 firm bananas, peeled and sliced
Instructions
- Preheat your oven to 300°F to keep French toast warm.
- In a large bowl, whisk together eggs, half-and-half or milk, sugar, cinnamon, and vanilla until frothy and smooth.
- Dip each slice of brioche in the custard mixture for 15-30 seconds per side.
- Heat 3 tablespoons of butter in a skillet over medium heat and cook soaked brioche for 3-4 minutes on each side until golden brown.
- For the banana topping, melt 6 tablespoons of butter in a separate pan, add brown sugar, maple syrup, and dark rum, and bubble for 2-3 minutes. Stir in bananas and cook for another 2-3 minutes until caramelized.
