- 1/2 cup honey or maple syrup
- 3/4 cup milk
- 3 tsp vanilla extract
Instructions
- Preheat your oven to 350°F (175°C) and prepare a muffin tin.
- Blend rolled oats to make oat flour.
- Mix together dry ingredients: oat flour, rolled oats, cinnamon, baking powder, baking soda, and salt.
- Combine wet ingredients: mashed bananas, beaten eggs, honey, milk, and vanilla extract.
- Fold the wet ingredients into the dry ingredients until just combined.
- Let the batter rest for 20 minutes.
- Spoon the batter into the muffin cups.
- Bake for 25-30 minutes, until a toothpick comes out clean.
- Cool in the pan for 10 minutes, then transfer to a wire rack.
- Store in an airtight container or freeze for later.
Notes
