Chewy, wholesome banana oatmeal bars that are a perfect healthy snack for any time of day.
Ingredients

- 2 ripe bananas, mashed
- 2 cups rolled oats
- 1/2 teaspoon cinnamon
- 1/4 cup honey or maple syrup
- 1/4 cup almond milk (or any milk of choice)
- 1/2 teaspoon vanilla extract
- 1/4 cup chopped nuts or chocolate chips (optional)
Instructions
- Preheat the oven to 350°F (175°C) and line an 8×8-inch baking dish with parchment paper.
- In a large mixing bowl, combine the mashed bananas, honey (or maple syrup), almond milk, and vanilla extract. Blend until smooth.
- Stir in the rolled oats and cinnamon. If using, fold in nuts or chocolate chips.
- Spread the mixture evenly in the prepared baking dish.
- Bake for 25-30 minutes, until golden brown and a toothpick comes out clean.
- Allow to cool for 10 minutes, lift out using the parchment paper, and cut into squares.
Notes
Store the bars in an airtight container for up to 3 days at room temperature, 1 week in the fridge, or 3 months in the freezer.
