A deliciously moist banana cake topped with a sweet glaze that brings comfort and joy, perfect for any occasion.

- 3 and 1/4 cups all-purpose flour
- 2 teaspoons baking soda
- 1/2 teaspoon salt
- 8 ounces unsalted butter, room temperature
- 1 and 3/4 cups granulated sugar
- 2 and 1/4 teaspoons pure vanilla extract
- 2 large eggs
- 2 cups very ripe bananas (about 4–5 bananas)
- 1 cup full-fat sour cream
- 1/2 teaspoon ground cinnamon
- For the glaze:
- 2.5 ounces unsalted butter
- 1/2 cup packed brown sugar
- 2 tablespoons milk
- 1/4 teaspoon vanilla extract
- 3/4 cup powdered sugar, sifted
- 1/4 cup walnuts, toasted and chopped (optional)
Instructions
- Preheat the oven to 350°F (175°C).
- Mash the very ripe bananas in a bowl until gooey.
- In another bowl, whisk together flour, baking soda, salt, and ground cinnamon.
- In a separate large bowl, beat the butter and sugar until light and fluffy, about 3-4 minutes.
- Add vanilla and eggs, beating well after each addition.
- Mix in the mashed bananas until well combined.
- Fold in half of the dry mixture, then add sour cream, followed by the remaining dry mixture. Stir gently.
- Grease a Bundt pan and pour the batter into it.
- Bake for 55 to 65 minutes, or until a toothpick comes out with a few moist crumbs.
- Allow the cake to cool in the pan for 15-20 minutes before transferring to a wire rack.
- For the glaze, combine butter, brown sugar, and milk in a saucepan over medium heat. Stir until melted, then let cool slightly before adding powdered sugar and vanilla.
- Drizzle the glaze over the cooled cake and sprinkle with walnuts. Let set for at least 15 minutes before serving.
Notes
Store in an airtight container at room temperature for up to 3 days or refrigerate for up to a week. Freezes beautifully for up to 3 months.
