Description

Ingredients

  • 1 1/4 cups granulated sugar
  • 2 large eggs
  • 2 teaspoons vanilla extract
  • 2 cups all-purpose flour
  • 2 1/2 teaspoons baking powder

  • 1/4 teaspoon salt
  • 3 ripe bananas, mashed
  • 4 ounces cream cheese, softened
  • 3 tablespoons unsalted butter, softened
  • 3 cups powdered sugar
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat the oven to 350°F (180°C) and grease a 9×11 inch baking pan.
  2. In a large mixing bowl, cream together the butter and sugar until light and fluffy.
  3. Add the eggs and vanilla extract, mixing until well combined.
  4. In a separate bowl, whisk together the flour, baking powder, baking soda, and salt.
  5. Gradually add the dry ingredients to the wet ingredients, alternating with the mashed bananas, mixing until just combined.
  6. Pour the batter into the prepared pan and smooth the top.
  7. Bake for 32-37 minutes, or until a toothpick inserted in the center comes out clean.
  8. Allow the cake to cool in the pan for 5 minutes, then transfer it to a wire rack to cool completely.
  9. In a mixing bowl, combine softened cream cheese and butter, then gradually add powdered sugar and vanilla extract, beating until fluffy.
  10. Once the cake is cooled, frost it with the cream cheese frosting and serve.
