Description

Ingredients

  • 5 very ripe, spotted bananas
  • 2 eggs (room temperature)
  • 1/2 cup unsweetened applesauce
  • 1/2 cup maple syrup
  • 2 tablespoons avocado oil
  • 1 teaspoon vanilla extract
  • 2 teaspoons baking powder
  • 1 teaspoon baking soda
  • 1/4 teaspoon salt
  • 2.25 cups whole wheat flour
  • 1/2 teaspoon ground cinnamon

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Line a 9×5 inch loaf pan with parchment paper.
  3. Mash the bananas in a large mixing bowl until mostly smooth with some lumps remaining.
  4. Add the eggs and whisk until well combined.
  5. Stir in the applesauce, maple syrup, avocado oil, and vanilla.
  6. In a separate bowl, whisk together the whole wheat flour, baking powder, baking soda, salt, and cinnamon.
  7. Gently fold the dry mixture into the wet ingredients until just combined.
  8. Pour the batter into the prepared loaf pan, smoothing the top.
  9. Bake for 50-60 minutes, or until a toothpick inserted comes out clean.
  10. Cool in the pan for about 15 minutes before transferring to a wire rack to cool completely.

Notes

For best results, use very ripe bananas and avoid overmixing the batter.
