- 5 very ripe, spotted bananas
- 2 eggs (room temperature)
- 1/2 cup unsweetened applesauce
- 1/2 cup maple syrup
- 2 tablespoons avocado oil
- 1 teaspoon vanilla extract
- 2 teaspoons baking powder
- 1 teaspoon baking soda
- 1/4 teaspoon salt
- 2.25 cups whole wheat flour
- 1/2 teaspoon ground cinnamon
Instructions
- Preheat your oven to 350°F (175°C).
- Line a 9×5 inch loaf pan with parchment paper.
- Mash the bananas in a large mixing bowl until mostly smooth with some lumps remaining.
- Add the eggs and whisk until well combined.
- Stir in the applesauce, maple syrup, avocado oil, and vanilla.
- In a separate bowl, whisk together the whole wheat flour, baking powder, baking soda, salt, and cinnamon.
- Gently fold the dry mixture into the wet ingredients until just combined.
- Pour the batter into the prepared loaf pan, smoothing the top.
- Bake for 50-60 minutes, or until a toothpick inserted comes out clean.
- Cool in the pan for about 15 minutes before transferring to a wire rack to cool completely.
Notes
For best results, use very ripe bananas and avoid overmixing the batter.
