Ingredients

  • 3/4 tsp nutmeg
  • 1/4 tsp ground ginger

  • 1 cup mashed banana (about 23 ripe bananas)
  • 2 eggs
  • 1.5 cups almond milk
  • 1/4 cup maple syrup
  • 1 tsp vanilla extract
  • 1/2 cup walnuts, chopped

Instructions

  1. Preheat your oven to 375°F (190°C) and grease a 9×13 inch baking dish.
  2. In a medium bowl, whisk together oats, baking powder, cinnamon, nutmeg, ginger, and salt.
  3. In a large bowl, mash the bananas and mix in eggs, almond milk, maple syrup, and vanilla extract.
  4. Gently stir dry mixture into wet mixture until just combined.
  5. Fold in the chopped walnuts.
  6. Pour the batter into the prepared baking dish and smooth the top.
  7. Bake for 40-45 minutes, checking with a toothpick for doneness.
  8. Cool for 15-20 minutes before slicing.
