Description

A delightful combination of baklava and cheesecake, these bite-sized treats offer a crispy, buttery crust filled with rich, creamy cheesecake and drizzled with honey syrup.


Ingredients

  • 1 cup graham cracker crumbs
  • 1/2 cup melted butter
  • 2 cups cream cheese, softened
  • 1 cup sugar
  • 1 tsp vanilla extract
  • 2 eggs
  • 1 cup chopped walnuts
  • 1 tsp cinnamon
  • 1/2 cup honey
  • 1/2 cup water
  • 1 tsp lemon juice

Instructions

  1. Preheat the oven to 325°F (160°C).
  2. In a medium-sized bowl, combine graham cracker crumbs and melted butter until well mixed. Press into a greased muffin tin.
  3. In another bowl, beat cream cheese, sugar, and vanilla extract until smooth and fluffy.
  4. Add eggs one at a time, mixing until incorporated.
  5. Fold in chopped walnuts and cinnamon.
  6. Pour the cream cheese mixture over the crusts in the muffin tin, filling them about 2/3 full.
  7. Bake for about 20-25 minutes until centers are set but still slightly jiggly.
  8. In a small saucepan, combine honey, water, and lemon juice. Bring to a gentle boil and simmer for about 10 minutes until thickened.
  9. Cool the cheesecake bites completely, then drizzle with the warm honey syrup.
  10. Chill in the refrigerator for at least an hour before serving.

Notes

Best served chilled. These bites can be made a day ahead; just drizzle the syrup right before serving.
