A delightful combination of baklava and cheesecake, these bite-sized treats offer a crispy, buttery crust filled with rich, creamy cheesecake and drizzled with honey syrup.

- 1 cup graham cracker crumbs
- 1/2 cup melted butter
- 2 cups cream cheese, softened
- 1 cup sugar
- 1 tsp vanilla extract
- 2 eggs
- 1 cup chopped walnuts
- 1 tsp cinnamon
- 1/2 cup honey
- 1/2 cup water
- 1 tsp lemon juice
Instructions
- Preheat the oven to 325°F (160°C).
- In a medium-sized bowl, combine graham cracker crumbs and melted butter until well mixed. Press into a greased muffin tin.
- In another bowl, beat cream cheese, sugar, and vanilla extract until smooth and fluffy.
- Add eggs one at a time, mixing until incorporated.
- Fold in chopped walnuts and cinnamon.
- Pour the cream cheese mixture over the crusts in the muffin tin, filling them about 2/3 full.
- Bake for about 20-25 minutes until centers are set but still slightly jiggly.
- In a small saucepan, combine honey, water, and lemon juice. Bring to a gentle boil and simmer for about 10 minutes until thickened.
- Cool the cheesecake bites completely, then drizzle with the warm honey syrup.
- Chill in the refrigerator for at least an hour before serving.
Notes
Best served chilled. These bites can be made a day ahead; just drizzle the syrup right before serving.
