A delightful fusion of baklava and banana cake, this Bundt cake combines moist banana flavors with crunchy nuts and a sweet honey syrup.

- 3 ripe bananas
- 1/2 cup unsalted butter, room temperature
- 1 cup granulated sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 1 1/2 cups all-purpose flour
- 1 teaspoon baking soda
- 1/2 teaspoon baking powder
- 1/2 teaspoon salt
- 1 teaspoon ground cinnamon
- 1/2 cup finely chopped walnuts or pistachios
- 1/2 cup honey
- 1/4 cup water
- 1 tablespoon lemon juice
Instructions
- Preheat your oven to 350°F (175°C) and grease and flour a bundt pan.
- Cream the room-temperature butter and granulated sugar until light and fluffy.
- Add eggs, one at a time, mixing well after each addition, then add mashed bananas and vanilla extract until just combined.
- In a separate bowl, whisk together flour, baking soda, baking powder, salt, and ground cinnamon. Gradually add this dry mix to the wet ingredients.
- Fold in chopped nuts until evenly distributed.
- Pour the batter into the prepared bundt pan and smooth the top.
- Bake for 50-60 minutes or until a toothpick comes out clean. Allow to cool in the pan for 10-15 minutes.
- Prepare the honey syrup by combining honey, water, and lemon juice in a saucepan. Simmer for about 5 minutes until slightly thickened.
- Invert the cake onto a cooling rack when cool, and drizzle with honey syrup.
