A delightful fusion of baklava and banana cake, this Bundt cake combines moist banana flavors with crunchy nuts and a sweet honey syrup.


Ingredients

  • 3 ripe bananas
  • 1/2 cup unsalted butter, room temperature
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1/2 cup finely chopped walnuts or pistachios
  • 1/2 cup honey
  • 1/4 cup water
  • 1 tablespoon lemon juice

Instructions

  1. Preheat your oven to 350°F (175°C) and grease and flour a bundt pan.
  2. Cream the room-temperature butter and granulated sugar until light and fluffy.
  3. Add eggs, one at a time, mixing well after each addition, then add mashed bananas and vanilla extract until just combined.
  4. In a separate bowl, whisk together flour, baking soda, baking powder, salt, and ground cinnamon. Gradually add this dry mix to the wet ingredients.
  5. Fold in chopped nuts until evenly distributed.
  6. Pour the batter into the prepared bundt pan and smooth the top.
  7. Bake for 50-60 minutes or until a toothpick comes out clean. Allow to cool in the pan for 10-15 minutes.
  8. Prepare the honey syrup by combining honey, water, and lemon juice in a saucepan. Simmer for about 5 minutes until slightly thickened.
  9. Invert the cake onto a cooling rack when cool, and drizzle with honey syrup.
