Description

A creamy and flavorful Baked Tuscan Chicken Casserole, blending tender chicken with sun-dried tomatoes and mozzarella for a comforting family meal.


Ingredients

  • 2 large chicken breasts, halved horizontally
  • Salt and pepper, to taste
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1/2 tsp paprika
  • 1 tsp Italian seasoning
  • 4 oz cream cheese, softened
  • 1/2 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 1 cup shredded mozzarella cheese, divided
  • 1/2 cup sun-dried tomatoes, chopped
  • 1 tbsp oil from the sun-dried tomato jar
  • 1 1/2 cups fresh spinach, roughly chopped

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Slice chicken breasts in half horizontally and season with salt, pepper, and garlic powder.
  3. Place the seasoned chicken in a greased 9×13-inch baking dish.
  4. Beat together cream cheese and heavy cream in a mixing bowl until smooth.
  5. Stir in onion powder, paprika, Italian seasoning, Parmesan cheese, and half of the mozzarella cheese.
  6. Pour the creamy sauce evenly over the chicken.
  7. Drizzle sun-dried tomato oil and scatter chopped sun-dried tomatoes on top.
  8. Cover with foil and bake for 20 minutes.
  9. After 20 minutes, remove foil, add spinach and remaining mozzarella on top.
  10. Bake uncovered for an additional 10 minutes, or until chicken is cooked through and cheese is golden.

Notes

Store leftovers in an airtight container for up to 3 days. Can be frozen prior to baking for up to 2 months.
