- 4 large eggs
- 2 cups fresh spinach
- 1/2 cup heavy cream
- 1/2 cup grated cheese (Gruyère or Parmesan)
- 1 tablespoon olive oil
- 2 cloves garlic, minced
- Salt and pepper to taste
- Fresh herbs for garnish (such as parsley or chives)
Instructions
- Preheat the oven to 375°F (190°C).
- In a skillet, heat the olive oil over medium heat. Add the minced garlic and sauté until fragrant, about 1 minute.
- Add the fresh spinach and cook until wilted (about 2-3 minutes), gently stirring and seasoning with salt and pepper.
- Spread the sautéed spinach evenly in a baking dish.
- Pour the cream over the spinach, making sure it’s evenly distributed, then create four wells in the mixture.
- Crack an egg into each well.
- Sprinkle grated cheese generously over the top.
- Bake in the preheated oven for about 15-20 minutes, checking around the 15-minute mark.
- Garnish with fresh herbs before serving.
Notes
Leftovers can be stored in an airtight container in the refrigerator for up to 2 days. You can prepare the spinach and cream mixture ahead of time.
