Ingredients
4 fillets of cod (6 oz each
2 tablespoons olive oil
3 cloves garlic, minced
1 whole lemon, zested and juiced
1/2 teaspoon salt
1/4 teaspoon black pepper
1/4 teaspoon paprika (optional)
2 tablespoons fresh parsley, chopped
Lemon slices, for serving
Instructions
- Preheat oven to 400°F (200°C). Lightly grease baking dish.
- Pat cod fillets dry and arrange in dish. Season both sides with salt, pepper, and paprika.
- In small bowl, whisk melted butter, olive oil, garlic, lemon zest, and 1 tbsp lemon juice.
- Pour sauce over fillets, gently rubbing into fish. Top each with lemon slice.
- Bake uncovered 12-15 minutes until fish flakes easily with fork (internal temp 145°F/63°C).
- Sprinkle with fresh herbs and drizzle with remaining lemon juice before serving.
Notes
- For crispier top, broil last 2-3 minutes
- Substitute haddock or halibut for cod if preferred
- Add 1/4 tsp red pepper flakes for spicy version
- Pairs perfectly with roasted asparagus or rice pilaf
