Description

Tender, flaky cod fillets baked to perfection with a bright lemon-garlic butter sauce and fresh herbs – a light yet flavorful seafood dish ready in under 30 minutes!


Ingredients

4 fillets of cod (6 oz each

2 tablespoons olive oil

3 cloves garlic, minced

1 whole lemon, zested and juiced

1/2 teaspoon salt

1/4 teaspoon black pepper

1/4 teaspoon paprika (optional)

2 tablespoons fresh parsley, chopped

Lemon slices, for serving


Instructions

  1. Preheat oven to 400°F (200°C). Lightly grease baking dish.
  2. Pat cod fillets dry and arrange in dish. Season both sides with salt, pepper, and paprika.
  3. In small bowl, whisk melted butter, olive oil, garlic, lemon zest, and 1 tbsp lemon juice.
  4. Pour sauce over fillets, gently rubbing into fish. Top each with lemon slice.
  5. Bake uncovered 12-15 minutes until fish flakes easily with fork (internal temp 145°F/63°C).
  6. Sprinkle with fresh herbs and drizzle with remaining lemon juice before serving.

Notes

  • For crispier top, broil last 2-3 minutes
  • Substitute haddock or halibut for cod if preferred
  • Add 1/4 tsp red pepper flakes for spicy version
  • Pairs perfectly with roasted asparagus or rice pilaf
