  • 1 teaspoon Salt
  • 1 teaspoon Pepper
  • 2 tablespoons Olive Oil (for sautéing)
  • 1 medium Onion (sauté until translucent)
  • 2 cloves Garlic (minced)
  • 1 tablespoon Ginger (grated)
  • 1 can Coconut Milk (full-fat preferred)
  • 3 tablespoons Lemon Juice (freshly squeezed)
  • 1 teaspoon Lemon Zest

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a large oven-safe skillet over medium heat, add olive oil. Add chopped onion and sauté until translucent (about 4-5 minutes).
  3. Add minced garlic and grated ginger, sauté for an additional minute.
  4. Pour in the coconut milk, lemon juice, and zest. Simmer for about 5 minutes.
  5. Season the cod fillets with salt and pepper, then nestle them into the simmering sauce.
  6. Transfer the skillet to the oven and bake for about 12-15 minutes, until the cod is cooked through.
  7. Remove from the oven and drizzle with extra lemon juice if desired before serving.
