Ingredients

  • 1 cup apple cider
  • 1 cup granulated sugar
  • 1/2 cup unsalted butter, melted
  • 2 large eggs
  • 1 tsp baking powder
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 1 tsp ground cinnamon
  • 1/2 tsp ground nutmeg
  • 1/2 tsp vanilla extract
  • 1/4 cup granulated sugar (for coating)
  • 1 tsp ground cinnamon (for coating)

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a muffin tin.
  2. In a large bowl, whisk together flour, sugar, baking powder, baking soda, salt, cinnamon, and nutmeg.
  3. In another bowl, whisk together apple cider, melted butter, eggs, and vanilla extract.
  4. Pour the wet ingredients into the dry ingredients and stir until just combined.
  5. Fill each muffin cup about 2/3 full with batter.
  6. Bake for 18-20 minutes until a toothpick comes out clean.
  7. While muffins bake, mix sugar and cinnamon in a small bowl for coating.
  8. Remove muffins from the tin and roll them in the cinnamon-sugar mixture while warm.

Notes

For best results, measure flour accurately and avoid overmixing the batter.
