Instructions
- Preheat your oven to 350°F (175°C) and grease a muffin tin.
- In a large bowl, whisk together flour, sugar, baking powder, baking soda, salt, cinnamon, and nutmeg.
- In another bowl, whisk together apple cider, melted butter, eggs, and vanilla extract.
- Pour the wet ingredients into the dry ingredients and stir until just combined.
- Fill each muffin cup about 2/3 full with batter.
- Bake for 18-20 minutes until a toothpick comes out clean.
- While muffins bake, mix sugar and cinnamon in a small bowl for coating.
- Remove muffins from the tin and roll them in the cinnamon-sugar mixture while warm.
