Bacon Egg and Cheese Burrito

Description

A hearty breakfast burrito stuffed with crispy bacon, fluffy scrambled eggs, melted cheese, and your favorite toppings – perfect for on-the-go mornings.


Ingredients

  • 6 large uncooked tortillas
  • 9 large eggs
  • 1/2 tsp salt
  • 1/3 cup heavy whipping cream
  • 1 tbsp salted butter
  • 1 cup Mexican cheese
  • 1 cup cooked bacon (chopped)

Instructions

  1. Cook bacon in skillet until crispy. Drain on paper towels, then crumble.
  2. In bowl, whisk eggs with milk, salt and pepper.
  3. Melt butter in same skillet over medium heat. Pour in eggs and scramble until just set.
  4. Warm tortilla in dry skillet or microwave for 10 seconds.
  5. Layer scrambled eggs, bacon, and cheese down center of tortilla. Add any optional toppings.
  6. Fold sides inward, then roll up tightly from the bottom.
  7. Optional: Return to skillet seam-side down for 1 minute to crisp and seal.
  8. Serve immediately or wrap in foil for portable breakfast.

Notes

  • Make ahead: Assemble burritos, wrap in foil, and freeze. Reheat in oven at 350°F for 20 minutes.
  • For healthier version: Use turkey bacon, egg whites, and whole wheat tortilla
  • Gluten-free option: Use GF tortillas
  • Extra tip: Spread a thin layer of refried beans on tortilla before adding other ingredients to help hold everything together
