Description
A hearty breakfast burrito stuffed with crispy bacon, fluffy scrambled eggs, melted cheese, and your favorite toppings – perfect for on-the-go mornings.
Ingredients
- 6 large uncooked tortillas
- 9 large eggs
- 1/2 tsp salt
- 1/3 cup heavy whipping cream
- 1 tbsp salted butter
- 1 cup Mexican cheese
- 1 cup cooked bacon (chopped)
Instructions
- Cook bacon in skillet until crispy. Drain on paper towels, then crumble.
- In bowl, whisk eggs with milk, salt and pepper.
- Melt butter in same skillet over medium heat. Pour in eggs and scramble until just set.
- Warm tortilla in dry skillet or microwave for 10 seconds.
- Layer scrambled eggs, bacon, and cheese down center of tortilla. Add any optional toppings.
- Fold sides inward, then roll up tightly from the bottom.
- Optional: Return to skillet seam-side down for 1 minute to crisp and seal.
- Serve immediately or wrap in foil for portable breakfast.
Notes
- Make ahead: Assemble burritos, wrap in foil, and freeze. Reheat in oven at 350°F for 20 minutes.
- For healthier version: Use turkey bacon, egg whites, and whole wheat tortilla
- Gluten-free option: Use GF tortillas
- Extra tip: Spread a thin layer of refried beans on tortilla before adding other ingredients to help hold everything together
