Ingredients

  • 10 strips of bacon (crispy for the best flavor)
  • 1 large egg (room temperature)
  • 3/4 cup whole milk
  • 1 3/4 cups all-purpose flour (sifted)
  • 1/4 cup light brown sugar
  • 1/4 cup ground flaxseed
  • 1 tablespoon baking powder
  • 1/2 teaspoon baking soda
  • 1 cup grated cheddar cheese (sharp)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Spray a muffin pan with non-stick spray or line it with paper cupcake liners.
  3. In a frying pan over medium heat, cook the bacon until crispy, about 5-7 minutes. Drain on paper towels and chop into pieces.
  4. Grate the cheddar cheese.
  5. In a large bowl, combine flour, light brown sugar, baking powder, and baking soda.
  6. In another bowl, beat together the egg and milk.
  7. Create a well in the dry mixture and pour in the wet mixture, stirring until just combined.
  8. Fold in the bacon, cheese, and ground flaxseed.
  9. Fill each muffin cup about 3/4 full with batter.
  10. Bake for 15 to 18 minutes until a toothpick comes out clean.
  11. Cool in the pan for 10 minutes, then transfer to a wire rack.
  12. Store leftovers in an airtight container or freeze.

Notes
