- 1 large egg (room temperature)
- 3/4 cup whole milk
- 1 3/4 cups all-purpose flour (sifted)
- 1/4 cup light brown sugar
- 1/4 cup ground flaxseed
- 1 tablespoon baking powder
- 1/2 teaspoon baking soda
- 1 cup grated cheddar cheese (sharp)
Instructions
- Preheat your oven to 350°F (175°C).
- Spray a muffin pan with non-stick spray or line it with paper cupcake liners.
- In a frying pan over medium heat, cook the bacon until crispy, about 5-7 minutes. Drain on paper towels and chop into pieces.
- Grate the cheddar cheese.
- In a large bowl, combine flour, light brown sugar, baking powder, and baking soda.
- In another bowl, beat together the egg and milk.
- Create a well in the dry mixture and pour in the wet mixture, stirring until just combined.
- Fold in the bacon, cheese, and ground flaxseed.
- Fill each muffin cup about 3/4 full with batter.
- Bake for 15 to 18 minutes until a toothpick comes out clean.
- Cool in the pan for 10 minutes, then transfer to a wire rack.
- Store leftovers in an airtight container or freeze.
Notes
For a lighter option, use turkey bacon. These muffins freeze well, making them perfect for meal prep.
