- 2 cups all-purpose flour
- 1 cup granulated sugar
- 1 cup canned pumpkin puree
- 1/2 cup vegetable oil
- 2 large eggs
- 1 tsp vanilla extract
- 2 tsp pumpkin pie spice
- 1 tsp baking soda
- 1/2 tsp salt
- 1/2 cup brown sugar
- 1/4 cup cold butter, cubed
- 1/2 cup powdered sugar
- 1–2 tbsp milk
Instructions
- Preheat your oven to 350°F (175°C). Grease a 9-inch round cake pan.
- In a large bowl, whisk together flour, sugar, pumpkin pie spice, baking soda, and salt.
- Add pumpkin puree, vegetable oil, eggs, and vanilla extract. Mix until just combined.
- Pour the batter into the prepared cake pan.
- In a separate bowl, mix brown sugar and flour. Cut in cubed butter until it resembles coarse crumbs, then sprinkle over the batter.
- Bake for 30-35 minutes, or until a toothpick comes out clean.
- Allow the cake to cool and drizzle with a glaze made from whisked powdered sugar and milk.
Notes
For a richer flavor, try browning the butter for the crumble. Ensure all ingredients are at room temperature before mixing.
