Description

A vibrant, seasonal salad featuring mixed greens, roasted butternut squash, sweet apples, and tart cranberries, perfect for autumn gatherings.


Ingredients

  • 4 cups mixed greens (baby kale, arugula, spinach)
  • 1 cup chopped apples (Honeycrisp or Fuji)
  • 1 cup butternut squash, roasted
  • 1/2 cup dried cranberries
  • 1/2 cup walnuts, chopped
  • 1/2 cup feta cheese, crumbled
  • 1/4 cup red onion, thinly sliced
  • 2 tablespoons balsamic vinaigrette

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Peel and dice the butternut squash, toss with olive oil, salt, and pepper, and roast for 20-25 minutes until golden brown and tender.
  3. In a large bowl, combine mixed greens, chopped apples, roasted butternut squash, dried cranberries, walnuts, feta cheese, and red onion.
  4. Drizzle with balsamic vinaigrette and toss well to ensure every bite is coated.
