Description

A hearty and zesty Thai Tom Yum Soup with tender chicken, aromatic herbs, and a balance of spicy, sour, salty, and sweet notes.


Ingredients

  • 4 cups unsalted chicken stock
  • 10.5 oz boneless skinless chicken thigh, cut into 1-inch pieces
  • 3 tbsp fish sauce
  • 34 dried chilies or fresh Thai chilies
  • 2 heads shallots, halved vertically
  • 2 stalks lemongrass, bottom half only
  • 56 thin slices galangal
  • 56 makrut lime leaves
  • 2 tbsp tamarind paste
  • 7 oz oyster mushrooms, straw mushrooms, or beech mushrooms
  • 1 cup halved cherry tomatoes or regular tomatoes cut into wedges
  • 23 tbsp lime juice
  • ½1 tsp sugar
  • ¼ cup cilantro or sawtooth coriander

Instructions

  1. Simmer the Stock: In a medium pot, bring the chicken stock to a gentle simmer. Add the chicken pieces and 2 tbsp of fish sauce; simmer for about 15 minutes until the chicken is cooked.
  2. Prepare the Chilies: Broil the dried chilies on LOW for about a minute until slightly charred, then add them to the soup pot. For fresh chilies, chop and add them raw.
  3. Char the Shallots: Increase the broiler temperature to HIGH and broil the shallots for 3-5 minutes until charred, then add to the stock pot.
  4. Prep the Lemongrass: Smash the bottom half of the lemongrass and cut into 2-3 inch pieces.
  5. Add Flavorful Ingredients: Add lemongrass, galangal slices, and bruise the makrut lime leaves before adding. Simmer for an additional 5 minutes.
  6. Incorporate Additional Ingredients: Add tamarind paste, mushrooms, and tomatoes, bringing the soup back to a gentle boil.
  7. Finish with Lime: Turn off the heat and stir in lime juice. Adjust seasoning with more tamarind or lime, if needed.
  8. Garnish and Serve: Stir in cilantro just before serving and enjoy hot.

Notes

Serve with jasmine rice to soak up the delicious broth. Adjust the spice level to preference.
