- 1 ½ cups julienned green papaya
- 2 cloves garlic
- Thai chilies, to taste
- 1 ½ Tbsp palm sugar, finely chopped, packed
- 3 long beans, cut into 2-inch pieces
- 3 Tbsp roasted peanuts
- 1 heaping tablespoon dried shrimp, roughly chopped (optional)
- 2 Tbsp fresh lime juice
- 2 tsp tamarind paste
- 1 ½ Tbsp fish sauce
- ½ cup grape tomato halves or one small tomato cut into wedges
Instructions
- Prep your papaya: Soak the julienned green papaya in ice water for about 15 minutes for extra crunch, then drain.
- Make the dressing: In a large mortar and pestle, pound garlic and Thai chilies into a fine paste.
- Mix in the sweetness: Add palm sugar to the garlic-chili paste, mashing until the sugar dissolves slightly.
- Add the veggies: Toss in long beans and pound lightly until they break. Follow with roasted peanuts and dried shrimp, mixing everything well.
- Season: Stir in fresh lime juice, tamarind paste, and fish sauce. Give it a good stir to combine all those exciting flavors.
- The final touch: Add shredded papaya and tomato into the mixture. Use the ‘pound-and-flip’ technique to mix without bruising the papaya too much.
- Serve: Plate your salad and sprinkle with extra peanuts if desired.
