Ingredients

  • 1 cup fresh parsley, finely chopped
  • 1 tablespoon fresh oregano, finely chopped
  • 3 cloves garlic, minced
  • 1/2 cup red wine vinegar
  • 1/2 cup olive oil
  • Salt to taste
  • Red pepper flakes (optional)
  • Fresh crusty bread (preferably baguette or ciabatta)

Instructions

  1. Prepare the Chimichurri: In a medium bowl, combine finely chopped parsley and oregano. Add minced garlic, red wine vinegar, and salt. Gradually whisk in olive oil until the mixture is well combined and vibrant. Let it sit for at least 30 minutes to allow the flavors to meld.
  2. Grill the Chorizo: Preheat your grill to medium-high heat. Place the chorizo sausages on the grill and cook for about 8-10 minutes, turning occasionally, until they are browned and cooked through.
  3. Toast the Bread: While the sausages are grilling, slice the bread lengthwise. Brush the cut sides lightly with olive oil. Place them on the grill for the last 2-3 minutes until golden brown and slightly crispy.
  4. Assemble the Choripán: Remove the sausages from the grill. Place them inside the toasted bread and generously drizzle chimichurri over the top.
  5. Serve Immediately: Serve your choripán hot, garnished with extra chimichurri on the side.

Notes

For a healthier option, add grilled vegetables or use whole-grain bread. Ensure to prevent soggy bread by toasting right after grilling the sausages.
