- 4 large sweet onions (Vidalia or similar)
- 2 tablespoons olive oil
- 1 cup heavy cream
- 1 cup Asiago cheese, grated
- Salt and pepper to taste
- Fresh parsley for garnish (optional)
Instructions
- Preheat oven to 400°F (200°C).
- Peel onions and cut in half. Drizzle with olive oil and season with salt and pepper.
- Place cut-side down on parchment-lined baking sheet. Roast 30-35 minutes until golden and tender.
- In saucepan, warm heavy cream over low heat. Stir in grated Asiago until melted and smooth.
- Pour cheese sauce over roasted onions. Return to oven for 5-10 minutes until bubbly.
- Garnish with fresh parsley before serving.

- Use sweet onions for best caramelization
- Sauce can be made ahead and reheated gently
- Leftovers keep in refrigerator for 3 days
