Description

Sweet roasted onions topped with a creamy Asiago cheese sauce, creating a decadent and comforting side dish that pairs perfectly with meats or stands alone as a vegetarian delight.


Ingredients

  • 4 large sweet onions (Vidalia or similar)
  • 2 tablespoons olive oil
  • 1 cup heavy cream
  • 1 cup Asiago cheese, grated
  • Salt and pepper to taste
  • Fresh parsley for garnish (optional)

Instructions

  1. Preheat oven to 400°F (200°C).
  2. Peel onions and cut in half. Drizzle with olive oil and season with salt and pepper.
  3. Place cut-side down on parchment-lined baking sheet. Roast 30-35 minutes until golden and tender.
  4. In saucepan, warm heavy cream over low heat. Stir in grated Asiago until melted and smooth.
  5. Pour cheese sauce over roasted onions. Return to oven for 5-10 minutes until bubbly.
  6. Garnish with fresh parsley before serving.
